Glazed Carrots
Ingredients
Round 2/3 carrots per person (if used as a side dish)
3 tbsps of runny honey
200g of butter
1 tbsp Brock and Morten garlic rapeseed oil
1 tsp thyme
Method
Add the rapeseed oil, butter and honey to a hot pan and warm through until the butter has just melted.
Add the carrots and thyme to the pan and cover with a lid. Cook for around 30 minutes until the carrots are tender. Check regularly to ensure the carrots are not sticking to the pan and add a drop of water if needed.
Serve as a side with a roast dinner, or enjoy on their own with crumbled feta.
