Rapeseed Oil Cookies

Ingredients

100g Brock and Morten Natural Rapeseed Oil or Brock and Morten Lemon Rapeseed Oil depending on flavour requirements.
180g Soft brown sugar.
50g Golden caster sugar.
1tsp Vanilla extract.
1 Large egg.
150g Plain flour.
1/2 tsp Baking powder.
1/2 tsp Bicarbonate Soda.
Pinch sea salt.
Add in chocolate chips/ nuts or any other toppings you prefer.

Method

Preheat the oven to 180 degrees.

Using an electric mixer, mix together the rapeseed oil, sugars, vanilla and eggs until well combined. Add in the dry ingredients and fold with a wooden spoon until thoroughly mixed through.

Using a ice cream scoop to portion the mixture, add to a lined baking tray leaving at least an inch between each mound of mixture as the cookies will flatten and spread.

Bake in the oven for around 10 minutes, until they look wrinkled on top. Remove from the oven and allow to cool.
