Smoked Garlic Aioli

Ingredients

4 cloves of garlic
2 egg yolks
1 tbsp Dijon mustard
300ml Brock and Morten Natural Rapeseed Oil
2 tbsp Brock and Morten Smoked Rapeseed Oil

Method

Add the cloves of garlic to a small roasting tin and drizzle with the Brock and Morten smoked rapeseed oil. Roast in the oven for around 30 minutes at 180 degrees.

Once the garlic has finished roasting and cooled, add to a blender along with the egg yolk and mustard and blend together to form a paste.

Continue to blend whilst slowly adding in the Brock and Morten natural rapeseed oil until the mixture becomes a thick mayonnaise style sauce. Add lemon juice and season to taste.
