Quick Carbonara
Serves 4-5 people
Ingredients
450g Pasta - variety of your choice. We use linguine.
4 eggs
90ml single cream
50g grated parmesan cheese
2 table spoons of natural or smoked rapeseed oil
6 slices of unsmoked bacon
Method
Bring a large pan of water to the boil. Once boiling add the pasta to the water and cook for around 8-10 minutes, or as the packet instructs.
Separate your eggs and keep the yolks in a bowl. Mix in the cream and the parmesan by lightly whisking together.
Cut the bacon into small pieces. Add your rapeseed oil to a hot pan and fry off you bacon until crisp.
You will need to work quickly with the next step. When the pasta has finished cooking drain, leaving a little of the cooking water to one side.
Add the pasta to the pan with the bacon and toss. Remove from the heat and add a ladle of cooking water and the cream mixture. Stir together, but do not add to the heat, let the heat from the cooked pasta and warm pan cook the sauce through.
Serve and enjoy.
