Pea and Ham Soup
Ingredients
1 tbsp Brock and Morten natural rapeseed oil
1 White Onion
1 large potato
350g frozen peas, garden peas are ideal.
400ml of chicken or vegetable stock
200ml milk
150g thick cut ham
Salt and pepper to taste
2 tbsp Brock and Morten flavoured rapeseed oil - of your choice, but we can recommend garlic or chilli with this dish.
Method
Finely chop the onion and cube the potato.
Heat the natural rapeseed oil in a pan and add in the chopped onion and potato.
Add salt and pepper and stir. Cover the frying pan with a lid and cook on a low heat for 10 minutes, until the potato has softened.
Add in the peas and the stock and bring to the boil. This will need to simmer for around 5 minutes.
Once the peas are cooked blend the mixture using a hand blender. Add in the milk and shredded ham, then gently warm through if needed.
Serve the soup with a spoon full of crรจme fraรฎche running through it and a drizzle of your favourite Brock and Morten flavoured rapeseed oil on top.
