Lemon Biscuits
Ingredients
160g Plain Flour
Half tsp Baking Powder
Half tsp Baking Soda
Half tsp Salt
130g Caster Sugar
35g Brock and Morten Lemon Flavoured Rapeseed Oil
Zest from 1 Lemon
2 tsp Vanilla Bean Paste (or vanilla extract as an alternative)
2 Eggs
Method
Pre-heat your oven to 200 degrees and line a baking tray with baking paper.
In a mixing bowl add the flour, baking soda, baking powder and salt and mix together thoroughly.
In a free standing mixer, or separate baking bowl add the sugar and Brock and Morten Lemon Flavoured Rapeseed Oil and then mix with an electric whisk until smooth.
Add the lemon zest and vanilla bean paste and mix until combined. You can then add in the eggs one at a time, ensuring they are thoroughly mixed.
Mixing on a low speed begin to add in the mixed dry ingredients a little at a time ensuring the dry mixture is fully combined.
Once all of the flour mixture has been added, scoop out the mixture in portion sizes and add to the lined baking tray.
Bake for around 15 - 20 minutes depending on the size of biscuit you have made.
Leave to cool for 5 minutes before eating.
