The Perfect Summer Salads
We have been truly spoilt with the British weather so far this year and we definitely aren’t complaining! It’s so lovely to see everyone uniting together, having bbq’s and relaxing in the sun.
Because the weather has been much warmer than usual, here at Brock & Morten we have been turning to fresh salad’s for lunchtime options as they are quick, super easy and refreshingly light on hot summer days.
Here are a couple of our favourites that we have been making over the past few weeks:
Salad with Balsamic Lime Dressing
Serves: 2
For the salad:
- Spring mix, or your favorite salad greens
- 1 mango, peeled and diced
- 1 avocado, peeled and diced
- 1- 1½c strawberries, diced
- 3-4 tbsp. salted cashews or macadamia nuts (more or less, to taste)
For the dressing:
- 2 Tbsp. lime juice (1-2 limes' worth)
- 2 Tbsp. Brock and Morten Balsamic Vinegar
- 1-2 Tbsp. honey (you may need 2 tbsp. depending on your taste)
- 1 tbsp. Natural Rapeseed Oil
- ¼ tbsp. salt
- ¼ tbsp. pepper
If you prefer a meal with meat just add grilled chicken to the salad.
Bacon Potato Salad
Serves: 2
Ingredients:
- 2 lb. baby gold potatoes
- 2 teaspoons salt, for the boiling water
- 1 lb. of bacon
- 1 small/medium red onion, diced small
- 2 cloves garlic, peeled and finely minced or pressed
- 3 tbsp. Natural Rapeseed Oil
- 3 tbsp. red wine vinegar
- 3 tbsp. Brock and Morten mustard mayonnaise
- 1 tbsp. granulated sugar, or to taste
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon pepper, or to taste
- 1 medium/large ear fresh sweet corn with kernels cut off (3/4 cup frozen corn may be substituted)
- 1 to 2 cups fresh baby spinach, loosely measured
- 1/2 cup fresh parsley (regular or Italian flat-leaf), finely chopped
